Cheese toastie

A deliciously crisp toasted sandwich with creamy cheese filling and ham, pan-fried until golden brown. Perfect for a quick and satisfying meal.

Preparation
Step 1
To prepare the filling, combine the yoghurt with chopped green onions and mix in the grated cheese.
Step 2
Arrange the bread slices on a chopping board, buttered-side down. Top one slice with the cheese mixture. Add the ham and sliced cornichon, if using, then place the other slice on top with the buttered side facing up.
Step 3
Heat a large frying pan over a medium heat. Place the sandwich in the pan and fry for 3 minutes on one side, pressing lightly with a spatula until the bread is golden brown.
Step 4
Carefully flip the sandwich using a spatula and another flat tool, such as a palette knife or the back of a spoon. Cook for another 2 minutes, or until both sides are crisp and golden.
Step 5
Slice the sandwich in half and serve.
