Begin by toasting four slices of your favorite bread under the grill.

Meanwhile, flake the mackerel into a bowl, discarding the skin.

Stir in double cream, grated Parmesan, a pinch of black pepper, chopped chives, and a touch of grated horseradish. Mix until well combined.

Spoon the mixture generously onto the toasted bread. Drizzle with a little more cream, sprinkle with extra Parmesan, and return to the grill for 3-4 minutes, until bubbling and golden brown.
