Cheese Soup with Smoked Chicken

Preparation
Step 1
You can add any grain of your choice to the soup if desired. Use any smoked chicken parts you like: breasts, thighs, drumsticks, etc. You can substitute smoked chicken with other smoked meats from turkey, pork, or beef. Choose soft processed cheese in plastic tubs - it melts quickly and easily in broth.

Wash, peel, and cut potatoes into medium cubes.

Peel the carrots and grate them on a coarse grater. Recently, I’ve been using a Korean carrot grater - I like the shape of the vegetable shreds.

Peel the onion and dice it finely.
Step 5
Wash the herbs, pat them dry, and chop finely. I use cilantro and parsley. If desired, replace or supplement with dill, green onions, or a mix of herbs.
Step 6
In a pot over medium heat, bring 2 liters (about 8 ½ cups) of water to a boil. Add smoked chicken and potatoes. Once it boils again, cook over medium heat for 15 minutes, skimming off any foam.
Step 7
After that, remove the chicken from the broth and let it cool. Separate the meat from the bones and cut it into small cubes.
Step 8
In a skillet over medium heat, heat vegetable oil. Add the onion.
Step 9
Then add the carrots. Sauté, stirring, for 3-5 minutes.
Step 10
Transfer the sautéed vegetables into the pot.

Then add the diced smoked chicken, processed cheese, pressed garlic, salt, and pepper. Stir until the cheese is fully melted. Bring the soup to a boil and cook for about 5 minutes.
Step 12
Finally, add chopped herbs. Remove the pot from the heat and let the soup rest for 10 minutes. Ladle into bowls and serve. Enjoy!
