Cheese Bread in the Oven

Be prepared to use more or less flour than stated. Focus not on the quantity, but on achieving the right dough consistency.
Preparation
Step 1
Use premium wheat flour. Dry yeast can be replaced with fresh yeast at a ratio of 1:3 (you'll need 18 g fresh yeast).
Step 2
Sift 260 g (2 cups) of flour into a bowl. Add sugar, salt, and yeast. Mix well. If using dry yeast, make sure it can be mixed directly with flour - check the label.
Step 3
In a small saucepan, combine milk and butter. Gently heat to about 104°F (40°C) until the butter melts. The mixture should be warm, not hot - too much heat will kill the yeast.
Step 4
Pour the warm milk mixture into the flour mixture and stir.

Add the egg and mix again.
Step 6
Knead a soft, elastic dough, gradually adding the remaining flour. You may need more or less than the recipe states - don’t add it all at once. Stop when the dough stops sticking to your hands.
Step 7
Place the dough into a bowl, cover with a towel, and let it rest for 10-15 minutes.
Step 8
Grate the cheese using a coarse grater.
Step 9
Roll the dough on a floured surface into a 14x10 inch (35x25 cm) rectangle. Sprinkle the grated cheese evenly on top.
Step 10
Roll the dough tightly along the long edge to form a log.
Step 11
Slice the log lengthwise with a knife, stopping just before the end so it stays connected. Turn the cut sides up.

Twist the two halves together, keeping the cheese side on top.
Step 13
Transfer the twisted dough into a greased rectangular baking dish (approx. 10x5 in / 25x13 cm). Let it rise in a warm place for 1-1.5 hours.
Step 14
For brushing and topping, use one egg and some sesame seeds.
Step 15
Before baking, brush the risen dough with beaten egg and sprinkle with sesame seeds. Bake in a preheated oven at 350°F (180°C) for 30-40 minutes until golden brown. For a fluffier result, place a tray of water on the lower rack.

Remove the cheese bread from the pan, slice, and serve warm. Enjoy!
