Preparation
Step 1
Prepare the ingredients. Choose a firm cheese that does not crumble and will hold its shape when fried; a firm fresh frying cheese works particularly well. If the honey has crystallized, gently warm it until liquid. Use vegetable oil suitable for frying.
Step 2
Wash the strawberries, remove the stems and pat them dry. Cut the berries in half. Medium-size strawberries of roughly equal size work best.
Step 3
Rinse the mint, pat it dry and remove the leaves from the stems.
Step 4
Cut the cheese into medium or large triangles. The pieces should be at least as large as the strawberry halves so the finished skewers remain stable.
Step 5
Coat the cheese pieces on all sides with cornstarch or potato starch. Shake off the excess so it does not burn in the pan.
Step 6
Heat the vegetable oil in a frying pan over high heat. Fry the cheese briefly on all sides until golden. It should develop a crust without melting or losing its shape. Watch it closely, as it browns quickly.
Step 7
Arrange the rinsed arugula on a serving plate and place the fried cheese pieces on top.
Step 8
Top each piece of cheese with half a strawberry and a mint leaf. Secure the cheese, strawberry and mint together with a skewer, making sure each piece stands steadily.
Step 9
Drizzle with liquid honey and, if desired, dust lightly with powdered sugar before serving.
