Cheddar frittata with peas and mint
A light and easy oven-baked frittata with onion, tomato, peas and cheese, finished with fresh mint and cooked until just set.

Preparation
Step 1
Preheat the oven to 200°C.
Step 2
Heat the olive oil and butter together in a small ovenproof non-stick frying pan. Add the onion and sauté gently until softened but not coloured.
Step 3
Stir in the tomato and peas, then season with salt and freshly ground black pepper.
Step 4
Pour in the eggs and sprinkle over the cheese. Cook over a low to medium heat until the base is just set.
Step 5
Transfer the pan to the oven and bake for 8-10 minutes, or until the frittata is cooked through.
Step 6
To serve, scatter over the mint and serve warm.
