Chechen-Style Meat and Dumplings
This hearty traditional Vainakh dish combines boiled meat with handmade dumplings, rich broth and a simple garlic sauce. Lamb is traditional, but beef, pork or chicken can also be used.

Preparation
Step 1
Prepare the ingredients. Wheat flour can be replaced with corn flour, which is also traditionally used for this dish. Lamb is the classic choice, but chicken or beef can also be used.
Step 2
Place the meat in a pot, cover with cold water and cook for 2–2½ hours, until tender. For a clean, flavorful broth, season only with salt and skim off any foam that rises to the surface during cooking.
Step 3
Remove the cooked lamb from the pot and separate the meat from the bones.
Step 4
Strain the broth. Leave half in the pot for cooking the dumplings and reserve the other half for making the dough and serving.
Step 5
To make the dumpling dough, combine the flour and egg in a bowl. Add ground black pepper and 1 cup of the meat broth.
Step 6
Knead into a firm, pliable dough that does not stick to your hands.
Step 7
Roll the dough out into a large circle and cut it into strips approximately 1¼–1½ inches wide.
Step 8
Cut the strips into small rectangles approximately ⅜ inch wide.
Step 9
Shape each piece into a small shell-like dumpling by pressing and dragging it with three fingers. You can shape the dumplings with both hands to work more quickly, or form them into another similar ridged or curled shape.
Step 10
Cook the shaped dumplings in the boiling broth for 10–15 minutes, stirring occasionally so they do not stick to the bottom of the pot.
Step 11
While the dumplings are cooking, prepare the garlic sauce. Peel the garlic, press or finely crush it and place it in a small serving bowl.
Step 12
Pour a little strong hot meat broth over the garlic, season with salt and ground black pepper and mix well.
Step 13
Use a slotted spoon to transfer the cooked dumplings to a large serving platter. Arrange the boiled meat over the top and sprinkle with fresh herbs. Serve each person a small bowl of the garlic broth sauce and a separate bowl of hot broth for dipping the meat and dumplings.
