Preparation
Step 1
You can reduce the sugar to your taste - with the listed amount the cake is very sweet. Use large eggs, or add an extra one if small. Choose large apples and pears as well. All ingredients should be at room temperature.
Step 2
Preheat the oven to 350°F (180°C). Crack the eggs into a bowl, wash and dry them first. Start beating on low speed, gradually increasing it. Slowly add sugar in batches, beating well each time. You should get a fluffy, pale mixture. Add sour cream at the end and beat again.
Step 3
Mix the flour with baking powder. Sift the flour into the egg mixture in three parts, folding each portion gently using a silicone spatula.
Step 4
The result should be a smooth, pourable batter. Add a bit more flour if needed.
Step 5
Wash and dry the fruits, then cut into large cubes. I didn’t peel them, but you can if you prefer.
Step 6
Use a suitable baking pan - I used a 9-inch (22 cm) silicone form that doesn't need greasing. If using a metal or glass pan, grease it with a bit of butter. Pour in half the batter. Spread the apple and pear cubes evenly on top.
Step 7
Pour the remaining batter over the filling and smooth the top.
Step 8
Bake in the preheated oven for 30-40 minutes. Exact baking time depends on your oven and cake size. Check doneness with a toothpick - it should come out clean from the center.
Step 9
Serve the charlotte warm. You may sprinkle it with powdered sugar. Enjoy!
