Charlotte Cake with Frozen Berries

The simplest and fastest homemade cake for any occasion! Charlotte Cake with Frozen Berries can be made in any season from any berries or their mix. Especially delicious in winter. The batter is easy to work with and made from sour cream and common ingredients.

Preparation
Step 1
Sift the flour in advance to aerate it. You can use any berries; I used a mix of lingonberries, cherries, black and red currants. No need to thaw. Melt butter in the microwave.

In a deep bowl, combine eggs and sugar. To dissolve sugar better, you can use a mixer.
Step 3
Add sour cream and melted butter. Mix everything into the batter.
Step 4
Add baking soda. Gradually add sifted flour and knead the dough. Flour amount may vary; adjust for consistency.

The batter should be thick, similar to pancake batter.
Step 6
Gently fold in the frozen berries with a spatula or spoon to avoid crushing them.
Step 7
Use a springform pan (18 cm). Line the bottom with parchment and grease the sides. Pour the batter evenly into the pan. Bake in a preheated oven at 180°C (356°F) for 40-50 minutes.
Step 8
The cake should turn golden and rise. Remove from the oven, let cool slightly, and serve.
