Chak-Chak with Honey
A famous Eastern sweet, original and very delicious! Chak-Chak with honey is a traditional Tatar dish, sweet and fragrant. It’s quite easy to make at home: pieces of dough are fried in oil, coated with a honey-sugar syrup, and shaped into a mound.

Preparation
Step 1
Take the eggs out of the fridge beforehand so they reach room temperature. Use premium quality wheat flour. Any honey will do, and sugar can be replaced with a sugar substitute if needed.
Step 2
Whisk the eggs with salt until smooth. Be sure to wash the eggs beforehand in warm water with baking soda, as bacteria can live on the shells.
Step 3
Sift the flour with baking soda onto a working surface. Make a well in the center and gradually pour in the beaten eggs while mixing to form a dough. Adjust flour amount as needed based on dough consistency.
Step 4
The dough should not stick to your hands but should not be too firm; otherwise, the chak-chak will be hard. Wrap it in plastic wrap and let it rest for 15–20 minutes.
Step 5
Divide the rested dough into two parts. Roll each into a thin sheet and cut into strips about 1.5–2 inches (4–5 cm) wide. Let them dry for about 10 minutes.
Step 6
Stack the strips, lightly flouring them so they don't stick, and cut into thin matchstick-sized strips.
Step 7
Separate the dough pieces and let them dry for a few more minutes.
Step 8
Heat vegetable oil in a heavy pot (like a cauldron) over medium heat. Fry the dough pieces in small batches until lightly golden.
Step 9
Remove the fried "noodles" with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Step 10
Prepare the sweet syrup: in a thick-bottomed pan, heat the honey and sugar together until boiling, then remove from heat.
Step 11
Dip nuts into the hot syrup if desired, then transfer to a separate bowl.
Step 12
Pour the hot honey-sugar syrup over the fried dough pieces and mix carefully (the syrup is extremely hot!).
Step 13
Wet your hands and the serving dish with cold water. Pile the sticky dough onto the dish and shape it into a mound. Decorate with nuts on top. Cover the finished chak-chak with plastic wrap and let it cool completely. The classic homemade chak-chak is ready. Enjoy!
