Cauliflower with sauce

A comforting cauliflower cheese bake made with a creamy mustard-infused cheese sauce, baked until golden and bubbling. Perfect as a side dish or vegetarian main.

Preparation
Step 1
Preheat the oven to 190C. Wash the cauliflower thoroughly, brake it into large florets, then place it in a large saucepan of salted water. Bring to the boil and cook for 3-5 minutes, until nearly tender but still firm. Drain well in a colander.
Step 2
For the sauce, melt the butter in a heavy-based saucepan and stir in the flour. Cook gently for 1 minute, then remove from the heat. Gradually whisk in the milk a little at a time, ensuring the mixture stays smooth. Return the pan to medium heat and bring to the boil, stirring constantly. Simmer for 2 minutes before removing from the heat.
Step 3
Stir in the mustard and two-thirds of the cheese, mixing until the cheese has melted and the sauce is smooth. Season with salt and pepper.
Step 4
Place the drained cauliflower into an ovenproof dish and pour over the sauce, covering evenly. Scatter the remaining cheese on top and bake for 25-30 minutes, or until the surface is golden and bubbling.
