Cauliflower with Cream and Cheese in the Oven

Preparation
Step 1
Use cream with at least 30% fat content. Also prepare a bowl of ice water in advance to quickly cool the cauliflower after boiling.
Step 2
Wash the cauliflower thoroughly under running water and divide into florets. Pour about 1.5 liters (6 cups) of filtered water into a pot and bring to a boil. Add 1 tsp of salt. Place the cauliflower into the boiling water and cook on low heat for about 5 minutes.
Step 3
Remove the cauliflower with a slotted spoon and immediately transfer it to a colander placed in a bowl of ice-cold water. Once cooled, drain and leave in the colander to remove excess liquid.
Step 4
Grate hard cheese on a coarse grater. Any quality cheese that melts well when baked will work. You may also substitute with fresh mozzarella (not brined).
Step 5
In a bowl, pour in the cream and add grated cheese. Season with salt and black pepper to taste. Mix well - the sauce is ready. You may also add other spices to your preference.
Step 6
Grease a baking dish with olive oil or refined sunflower oil. Place the cauliflower florets into the dish. Pour the cream and cheese mixture over them. Optionally, garnish with halved cherry tomatoes. Bake in a preheated oven at 375°F (190°C) for about 20 minutes. Since ovens vary, adjust the time as needed. For a golden crust, switch on broil for 5 minutes at the end.
Step 7
Baked cauliflower with cream and cheese is best served warm. It can be enjoyed as a main dish for dinner or lunch, or as a side dish with meat. Bon appétit!
