Cauliflower with blue cheese

A rich and comforting cauliflower gratin. Baked until golden and bubbling for the perfect side dish or vegetarian main.

Preparation
Step 1
Bring about 5cm/2in of water to the boil in a saucepan. Add the cauliflower florets and cook for approximately 8 minutes, or until tender. Drain well, then return the cauliflower to the pan.
Step 2
Stir in the cream cheese and mustard, mixing until evenly coated.
Step 3
Add the blue cheese and continue to stir until the cheese begins to melt into the mixture. Season with a little salt, if needed, and plenty of freshly ground black pepper.
Step 4
Transfer the mixture to a shallow gratin dish. Sprinkle the chopped walnuts evenly over the top, then cover with the cheddar - this will help protect the walnuts from burning.
Step 5
Place the dish under a preheated hot grill and cook for 10-15 minutes, or until the top is golden brown and the filling is hot and bubbling.
Step 6
Serve immediately while piping hot.
