Cauliflower pizza

A light and wholesome cauliflower crust pizza topped with melted mozzarella, fresh tomatoes, and basil. Crispy, flavorful, and perfect for a healthier twist on pizza night.

- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Preheat the oven to 170C. Line a baking tray with baking parchment and lightly grease with butter, ghee, or coconut oil.
Step 2
Grate the cauliflower into rice-sized pieces using either a hand grater or a food processor.
Step 3
Place all the pizza base ingredients in a bowl and mix well with a spoon, or add them to the food processor and blend until a sticky dough forms.
Step 4
Spread the dough onto the prepared tray using the back of a spoon, shaping it into a 30cm/12in circle.
Step 5
Bake in the oven for about five minutes, then flip the base over and return it to the oven for another two minutes.
Step 6
Tear the mozzarella ball into small pieces and scatter them evenly over the pizza base.
Step 7
Slice the tomatoes into 1cm/½in rounds and arrange them across the pizza. Add a sprinkle of chilli flakes if you like extra heat.
Step 8
Return the pizza to the oven and bake for 10-15 minutes, until the mozzarella is melted and bubbling.
Step 9
Finish by sprinkling fresh basil leaves over the top and drizzling with olive oil before serving.
