Caucasus-Style Beef-Stuffed Kefir Flatbreads

Preparation
Step 1
Prepare all the ingredients and spices required for the beef-stuffed flatbreads.
Step 2
Pour 5.3 oz of room-temperature kefir and 5.3 oz of warm boiled water into a large bowl.
Step 3
Add 1 tablespoon of vegetable oil, ½ teaspoon of salt and ½ teaspoon of baking soda.
Step 4
Gradually add 17.6 oz of flour, mixing thoroughly with a whisk.
Step 5
Continue kneading the dough in the bowl with your hands.
Step 6
Transfer the dough to a work surface lightly dusted with flour and knead it thoroughly by hand. Place the dough in a food-safe bag and leave it to rest for 30 minutes.
Step 7
Place 10.6 oz of ground beef in a bowl. Add salt and a mixture of ground peppers to taste, then mix well.
Step 8
Place the rested dough on a floured work surface and knead it briefly once more.
Step 9
Shape the dough into a thick log. Divide it into the required number of small pieces and shape each piece into a ball.
Step 10
Divide the ground beef into portions approximately the same size as the dough balls.
Step 11
Flatten each dough ball into a small round. Place one portion of ground beef in the center.
Step 12
Bring the edges of the dough together and seal them firmly. Gently flatten the filled dough.
Step 13
Carefully stretch and flatten each piece into a thin round no more than ¼ inch thick. Make sure the meat filling is distributed evenly throughout the dough.

Heat a dry frying pan over medium heat. Add one flatbread and cook for about 5 minutes on the first side.
Step 15
Turn the flatbread over and cook for about 5 minutes on the other side. If air pockets form while cooking, gently lift the flatbread or carefully pierce a bubble with the tip of a knife.

Brush both sides of each cooked flatbread with butter to taste. Stack them on a plate.

Cut the prepared flatbreads into quarters and serve.
