Catfish Head Soup
A light and aromatic first course that is always a hit! Catfish head soup is wonderfully flavorful without being overly rich. It is so simple to prepare that even a beginner can make it with ease, and the result is sure to please everyone.

Preparation
Step 1
Prepare all the required ingredients. Chilled fish is preferable, but properly thawed frozen fish will also work. In addition to the head, you can use other parts of the fish, such as the tail and fins.
Step 2
Cut off the fish head and remove the gills, as they can make the broth bitter. Rinse the head and any other fish parts thoroughly.
Step 3
Place the fish in a saucepan, pour in filtered water and bring to a boil over low heat.
Step 4
Rinse the potatoes thoroughly, peel them and cut them into medium-sized cubes.
Step 5
Once the water comes to a boil, cover the saucepan and cook the fish over very low heat for about 15 minutes.
Step 6
Remove the fish from the broth and leave it to cool. If desired, add a bay leaf, peppercorns or other favorite spices to the broth. Continue simmering over very low heat.
Step 7
Add the potatoes to the saucepan. Cover and continue cooking.
Step 8
Rinse and peel the carrot, then grate it coarsely. Peel and rinse the onion, then cut it into small cubes.
Step 9
Heat the vegetable oil in a frying pan. Add the carrot and onion and fry for about 5–7 minutes, until the onion is golden.
Step 10
Add the fried vegetables to the soup. Cover and cook for another 10 minutes, or until the potatoes are completely tender.
Step 11
Separate the cooled fish meat from the bones and cut it into small pieces. Add the fish to the saucepan and season the soup with salt to taste.
Step 12
Ladle the catfish head soup into bowls and serve immediately. Garnish each serving with finely chopped fresh dill, if desired.
