Carrot hummus with flatbreads

Homemade garlic and herb flatbreads served with a smooth, spiced carrot hummus - perfectly warm, golden, and ideal for sharing.

- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
For the flatbreads, place the flour, oil, and water in a large bowl with a generous pinch of salt. Mix with a table knife, then bring the dough together with your hands. Transfer to a floured work surface and knead for 4-5 minutes until smooth.
Step 2
Flatten the dough into a round, scatter over the garlic and herbs, then reshape into a ball and knead again until the flavors are evenly incorporated. Divide into six equal portions. On a lightly floured surface, roll each portion into a very thin circle.
Step 3
Heat a large frying pan until very hot and lightly oil the surface with kitchen paper. Cook one flatbread at a time for 2 minutes, until it begins to puff and turn golden. Flip with a palette knife and cook for another 2-3 minutes. Repeat with the remaining flatbreads, adding more oil if needed.
Step 4
For the carrot hummus, combine all the ingredients in a food processor, season with salt and pepper, and blend until smooth and creamy. Serve alongside the warm flatbreads.
