Carrot Cake with Walnuts
Very tasty, very budget-friendly, very simple - a treat for everyone! Carrot cake with walnuts can be baked as one large cake or in small molds. For extra aroma, add citrus zest or ground ginger.

Step 1
How do you bake carrot cake with walnuts? Prepare the necessary ingredients. Peel the carrots and rinse under running water. Roughly chop the walnuts with a knife and toast them in a dry skillet for a few minutes until fragrant. Stir constantly so they don’t burn. As soon as you turn off the heat, transfer the nuts to another bowl - on the hot pan they can keep browning and burn.
Step 2
For the batter, use any deep bowl that’s convenient for mixing by hand. Grate the peeled carrots on a fine or medium grater directly into the bowl.
Step 3
Add the eggs to the grated carrots and a little ground cinnamon. If you like a stronger cinnamon aroma, add more. A light, subtle aroma is also great.
Step 4
Sift the flour to aerate it. Pour vegetable oil into the bowl with the carrots. Then add sugar and the flour mixed with baking soda. Mix everything with a spoon, whisk, or wooden spatula.

The batter will be fairly thick. Add the toasted walnuts and mix.
Step 6
Transfer the batter into a suitable baking pan lightly greased with vegetable oil. It can be glass, ceramic, silicone, or a disposable foil pan.
Step 7
Bake in an oven preheated to 180°C / 356°F for 40-50 minutes, depending on your oven. Check doneness with a wooden skewer - it should come out dry. Remove the cake from the oven and let it cool slightly.
Step 8
Once cooled, dust with powdered sugar or decorate with cream and berries. Enjoy your tea!
