Carrot Cake with Kefir

Simple, soft, juicy, healthy, and low in calories! This healthy carrot cake contains no sugar or fat, making it light and low-calorie. Instead of wheat flour, it uses oat flour, which adds even more nutritional value. Apples and carrots give it moisture and flavor.

Preparation
Step 1
You can use store-bought oat flour or make it yourself by grinding oat flakes in a coffee grinder. We’re using kefir of any fat content, but to reduce calories, choose low-fat. It’s best to use liquid honey.
Step 2
Pour the flour into a bowl and add the kefir. Stir and leave for 20 minutes to swell.
Step 3
Wash the eggs and crack them into a bowl. Start beating them with a mixer at medium speed. When foam appears on the surface, pour in the honey and increase the speed. Beat the eggs until you get a fluffy, light mixture, for a few minutes.
Step 4
Then add the swollen oat flour from the kefir into the beaten eggs. Add baking powder. Mix the batter until smooth.
Step 5
Wash the apples and peel off the skin. Cut them into quarters, remove the core. Cut the slices into small cubes.
Step 6
Peel the carrot and grate it. Use a fine or medium grater, not a coarse one. Alternatively, you can chop the carrot in a blender. The method of chopping doesn’t significantly change the cake’s taste, only its texture.
Step 7
Add the grated carrot to the batter and stir.
Step 8
Next, add the chopped apples and stir again. The finished cake will have a light apple flavor.
Step 9
Take a suitable baking form, grease it lightly with vegetable oil (there’s no need to grease a silicone mold). Mine is 20 cm in diameter. Pour the batter into the form and level the top.
Step 10
Bake this simple cake in an oven preheated to 180°C (350°F) for 45 minutes to 1 hour. The exact time depends on your oven and the size of the pan. Check readiness with a wooden skewer - it should come out dry from the center. Let the cake cool and remove it from the pan.

Serve the cake at the table. Enjoy your meal!
