Carrot and sweetcorn fritters

Crispy carrot and sweetcorn fritters spiced with ginger, chilli, and garam masala, pan-fried to golden perfection for a quick and flavorful vegetarian dish.

Step 1
Place the grated carrots into a mixing bowl and combine with the sweetcorn, flour, spring onions, ginger, chilli, seeds, garam masala if using, a good pinch of salt, and plenty of black pepper. Mix thoroughly, then set aside for 5 minutes to allow the mixture to settle.
Step 2
Heat 2 tablespoons of coconut oil in a large non-stick frying pan over medium heat. Take a portion of the carrot mixture in your palm and firmly shape it into a fritter. Repeat the process to form two more fritters.
Step 3
Cook the fritters in the pan for about 3 minutes on each side, or until they are golden and crisp, pressing gently with a spatula to flatten them as they cook. Once done, transfer to kitchen paper to drain.
Step 4
Form another three fritters in the same way. Add an extra tablespoon of coconut oil to the pan, then cook the remaining fritters until crisp and golden.
