As a dressing, you can use not only mayonnaise but also sour cream or natural yogurt. They can be used separately or mixed with mayonnaise in any proportion to your taste, which will reduce the dish’s calorie content.
Preparation
Step 1
Prepare the ingredients. Instead of smoked chicken breast, you can use any smoked meat or sausage. You can use store-bought or homemade Korean-style carrots. The same applies to croutons—you can buy ready-made ones or make them at home. Mayonnaise can also be homemade.
Step 2
How to make croutons for the salad? Take a couple of slices of white bread. Any type will work—baguette, ciabatta, sandwich bread, or regular loaf. Cut the bread into evenly sized squares so they toast at the same rate.
Step 3
Place the bread cubes in a dry pan over low heat. Toast the croutons, stirring occasionally, for about 10 minutes until they turn slightly golden and crispy. If desired, you can make garlic croutons—simply crush a garlic clove, mix it with a little vegetable oil, and stir into the bread before toasting.
Step 4
While the croutons are toasting, start preparing the salad. Cut the smoked chicken into small cubes. Drain the canned corn using a sieve to remove excess liquid. If the Korean-style carrots are too long, chop them into smaller pieces.
Step 5
In a salad bowl, combine the diced chicken, Korean carrots, corn, and croutons. Add mayonnaise and mix well. Add salt to taste if needed, though I skipped it since the smoked chicken, carrots, and mayonnaise already contain salt.
Step 6
Serve the Carousel Salad with Smoked Chicken immediately before the croutons soften. If you plan to prepare it in advance, add the croutons and mayonnaise just before serving. Enjoy your meal!
