Preparation
Step 1
Let’s start making caramel popcorn. Prepare the necessary cookware. We will need a skillet with a lid. It is better to choose a larger skillet, because the corn increases greatly in volume. The lid should fit tightly or be heavy so the popcorn does not fly out while popping. We will cook the caramel in a small saucepan. I use an enamel ladle pot with a long handle.

Prepare all the necessary ingredients and begin cooking.

Pour the corn into a dry skillet and spread it evenly over the bottom. Cover with the lid and set the heat to medium.
Step 4
Pour water into the saucepan and add the sugar. One cup of sugar makes a very sweet caramel, so if you do not like things too sweet, you can reduce the amount of sugar. There is no need to stir. Set the stove to a heat level a little above medium.
Step 5
Now you can raise the heat under the skillet with the corn. After a while, the corn will begin to pop. Shake the skillet while it cooks so the kernels heat evenly and pop evenly.
Step 6
As the sugar dissolves, do not stir the syrup with a spoon. You can mix it by lifting and turning the saucepan. That is why a saucepan with a long handle is convenient. Keep an eye on the syrup without forgetting about the corn.
Step 7
When the popping stops, shake the skillet one last time, count to 15, and turn off the heat.
Step 8
When the caramel turns golden, add the butter to the saucepan and wait until it melts. Now you can stir thoroughly with a spoon. Add the baking soda and mix well again. The caramel is ready.
Step 9
Remove the lid from the skillet and pour the caramel in a thin stream over the popcorn, stirring it at the same time. You need to do this very quickly, because the caramel hardens immediately when it comes into contact with air.
Step 10
Leave the caramel popcorn to cool for about 10 minutes. If it sticks together too much, you can separate it after it has cooled.
