Caramel Apple Upside-Down Pie

Soft yeast dough with orange aroma - delicious! Caramel Apple Upside-Down Pie is indescribably tasty and fragrant, disappearing from the table instantly. Easy to make, and apples can be replaced with other fruits or berries.

Preparation
Step 1
Start with the dough. Use high-quality flour. Any vegetable oil will work; I used sunflower oil.
Step 2
Sift the flour into a bowl. Add dry yeast and mix. For this recipe, you need instant yeast that can be mixed directly with flour. Check the instructions carefully.
Step 3
In another bowl, combine egg, sugar, vanilla sugar, and salt. Whisk until smooth.
Step 4
Warm the milk until it’s just warm (not hot). Pour into the egg mixture and stir.
Step 5
Add the milk-egg mixture to the flour with yeast, then pour in vegetable oil.
Step 6
Knead into a soft, elastic dough. Add more flour if needed, but don’t overload it - slight stickiness is fine. Add orange zest and knead again.
Step 7
Place dough in a bowl, cover with a towel, and leave in a warm place for 1 hour to rise.
Step 8
Meanwhile, prepare the filling and caramel. Use firm, tart-sweet apples (like Granny Smith). Avoid soft apples, as they may turn to mush.
Step 9
Wash apples, peel, remove cores, and slice. If they brown quickly, sprinkle with lemon juice.
Step 10
Make caramel: put sugar and orange juice in a pan. Cook over low heat, stirring, until golden.
Step 11
Add butter, stir until melted. The caramel should turn slightly brown, but don’t burn it - watch carefully.
Step 12
Add apples and stir to coat in caramel. Simmer on low for about 5 minutes. Apples should keep their shape.
Step 13
Roll out the risen dough into a circle to fit your baking pan.
Step 14
Place caramelized apples in the baking dish and spread evenly. (My pan is 20 cm/8 in, but larger works too.) Apples should cover the bottom fully.
Step 15
Lay the rolled dough on top of the apples. Cut small slits in the dough to release steam. Bake at 180°C / 355°F for 40-45 minutes. Place parchment or foil under the dish to prevent spills.
Step 16
Invert the hot pie onto a plate so apples are on top. Let cool slightly and serve. Enjoy!
