Canned Cabbage and Tomato Soup

To prepare fresh cabbage soup for winter in a jar, you can also use bell peppers, garlic, and tomato paste. From the listed ingredients, I got 1.5 liters of preparation. Enjoy your meal!

Step 1
Prepare all the ingredients you will need for this preparation. Remove any damaged outer leaves from the cabbage.
Step 2
Peel the onions and carrots. Rinse all vegetables and greens under cold running water.
Step 3
Shred the cabbage into thin strips. You can do this using a vegetable slicer. Transfer the cabbage to a pot or a suitably sized bowl. Sprinkle with salt and mix well. Let it sit for a while to release its juices and shrink in volume.
Step 4
Meanwhile, prepare the rest of the vegetables. Grate the carrots on a coarse grater, and cut the onions and tomatoes into small cubes. If needed, peel the tomatoes in advance (make a cross-cut on top, dip them in boiling water for 1-2 minutes, then peel). Chop the greens.
Step 5
Add the chopped vegetables to the pot with the cabbage.
Step 6
Bring to a boil over high heat, stirring occasionally.

Pour in vegetable oil and add sugar and peppercorns. Stir well and simmer over medium heat for 10 minutes.

Add vinegar and mix everything thoroughly again.

Distribute the vegetable mixture into sterilized jars.

Seal the jars with sterilized lids using a special key. Turn the jars upside down and wrap them in a warm towel or blanket. Let them cool completely before storing them in a pantry or cellar for long-term storage.
