Canapés with Red Fish on Skewers and Cream Cheese

Very simple and very beautiful - perfect for a festive table. Canapés with red fish on skewers and cream cheese are a tasty and striking appetizer that even a child can make. The harmonious combination of tomatoes, soft cheese, and red fish can be complemented with olives. Be creative!

Preparation
Step 1
You can use plain cream cheese without additives, flavored cream cheese to your taste, or substitute with processed cheese or any other soft cheese.
Step 2
Slightly freeze the red fish, remove the skin, and cut it into squares about ¾ inch (2 cm) wide and ⅓-½ inch (1 cm) thick.
Step 3
Wash and dry the tomatoes. For cherry tomatoes, cut off the top cap. Using a teaspoon or coffee spoon, carefully scoop out the pulp without damaging the walls. To make it easier, you can first cut around the pulp with a knife.
Step 4
Prepare the filling for the tomatoes. Wash, dry, and finely chop the dill.
Step 5
In a bowl, combine cream cheese, dill, salt, and pepper. The cheese should be at room temperature, so remove it from the fridge in advance.

Mix until smooth. Adjust the consistency: if the cream is too thick, you can dilute it with sour cream or heavy cream until softer (but not runny). Transfer the cheese mixture into a piping bag with a large nozzle.
Step 7
Fill the cherry tomatoes with the cream cheese mixture using the piping bag. A teaspoon can also be used.
Step 8
Assemble the canapés. Place one stuffed cherry tomato on each piece of fish. Skewer the appetizer from top to bottom with a small wooden skewer.
Step 9
For extra stability, you can add cucumber slices. Garnish with greens and serve. Enjoy!
