Cake Without Butter

Preparation
Step 1
You can use kefir of any fat content. Cornstarch or potato starch works (use half the amount, 10 g). Use odorless vegetable oil. Raisins should be seedless. All ingredients should be at room temperature; bring eggs and kefir out of the fridge in advance. If not, place eggs in warm water and warm or dilute kefir with hot water.

Rinse raisins and soak in boiling water for 10 minutes to soften and clean them.
Step 3
Drain raisins, rinse again, and spread in a single layer on paper towels to dry.
Step 4
Wash the lemon well (preferably with baking soda in warm water) and scrub the peel with a stiff sponge. Grate only the yellow part of the zest.
Step 5
Cut the lemon and squeeze out the juice through a small strainer to avoid seeds.
Step 6
Sift the flour into a bowl, add starch, baking powder, and salt. Mix the dry ingredients.
Step 7
In another bowl, beat the eggs (washed beforehand) with sugar until light and fluffy.

Reduce mixer speed to low, add kefir and vegetable oil, mix gently until smooth.
Step 9
Combine dry and wet ingredients, mix at low speed. Add lemon juice, zest, and vanilla. The batter should be like liquid sour cream; if too runny, add a little flour.
Step 10
Coat raisins lightly in flour and fold into the batter to prevent sinking.
Step 11
Prepare a baking pan. Silicone pans don’t need greasing; metal, ceramic, or glass pans should be lightly oiled. Pour in the batter.
Step 12
Bake in a preheated oven at 180°C (356°F) for 50-60 minutes. Check doneness by inserting a wooden skewer; if it comes out dry, the cake is ready.

Let the cake cool, remove from the pan, optionally dust with powdered sugar, and serve.
