Preparation
Step 1
On a clean chopping board, place the anchovies and garlic, sprinkle over a pinch of coarse salt, and mash them together with the edge of a knife until a rough paste forms.

Transfer the paste to a bowl and stir in the Parmesan, olive oil, and mayonnaise. Grate in the lemon zest, squeeze in the juice, and mix until everything is well combined.
Step 3
To loosen the mixture, add 1-2 tablespoons of ice-cold water, adjusting to your preferred consistency. Taste and season with salt and freshly cracked black pepper.

Stored in a sealed container in the fridge, this creamy, tangy dressing will keep fresh for 3-5 days.
