Cut the cleaned white cabbage in half, then carefully remove the cores.

Place a portion of the shredded cabbage as the first layer into a large enameled pot.

Add some dill seeds to the first layer of cabbage in the pot.
Step 5
Sprinkle a little coarse salt (for pickling) onto the cabbage layer.

Add a bit of grated carrot (use a coarse grater) into the pot.
Step 7
Massage the cabbage thoroughly with your hands to release its juice.

Once juice starts to appear, proceed with the next layer.

Continue layering cabbage, salt, dill seeds, and carrots in the same way, squeezing each layer with your hands.

When all layers are in, press down the cabbage with a masher until abundant juice appears.

Cover the cabbage with a plate that doesn’t fully close the surface, just enough to keep it submerged in brine. Press it down with a suitable weight.

Let the cabbage ferment for 3-5 days at room temperature. During this time, release gas daily and pierce the cabbage with a clean wooden stick or spatula three times a day.

After fermentation, place the cabbage into sterilized jars (use any sterilization method you prefer), filling each jar to the very top.

Press the cabbage down in the jars with a spoon so that it's fully covered with brine.

Seal the jars tightly with clean, soda-washed, and boiled plastic lids for preserving.

Store the jars in a cool place like a refrigerator, cellar, or basement.
