Cabbage Soup with Tomatoes and Meat

Preparation
Step 1
Prepare all the necessary ingredients from the list and start with making the broth. You can use any meat (pork, beef, chicken), or skip the meat and use meat or vegetable broth, or even plain water. For a richer broth, use meat with bones like shank or shoulder. I’m using beef ribs with a good amount of meat.
Step 2
Rinse the meat. Place it into a pot with boiling water. Add a whole peeled onion, 4 allspice berries, and 2 bay leaves. Simmer on low heat for 1.5 hours until the meat is tender. Add salt at the end.
Step 3
Peel the potatoes and cut them into small cubes.
Step 4
Finely shred the white cabbage.
Step 5
Peel the tomato and cut it into small cubes. To easily peel tomatoes, score the tops with a cross using a sharp knife, blanch in boiling water for 1-2 minutes, then cool slightly and peel.

Peel the carrot and cut it into small cubes.

Dice the second onion.
Step 8
Wash, dry, and finely chop the dill and parsley. You can also add or substitute with green onions, cilantro, or a mix of herbs.
Step 9
Remove the meat from the broth, let it cool, remove from the bones, and cut into small pieces.
Step 10
Strain the broth, return it to the pot, and bring it to a boil.
Step 11
Add the potatoes to the broth. Cook for about 10 minutes.

In a pan, sauté the onion in vegetable oil for 5 minutes.

Add the carrots and sauté for another 5 minutes until golden.

Transfer the sautéed mixture into the soup pot.

Add the cabbage, the remaining allspice and bay leaf. Cook for 10 minutes. You can use sauerkraut instead of fresh cabbage if desired.

Add the diced tomatoes. Salt and pepper the soup to taste. Cook for another 2-3 minutes.
Step 17
Finally, add the chopped greens. Remove the soup from heat, cover the pot, and let it sit for about 15 minutes. Enjoy!
