Cabbage Soup in Clay Pots Baked in the Oven

Hearty, extremely aromatic, and amazingly delicious! Cabbage soup in clay pots baked in the oven turns out incredibly tasty. Thanks to the flour, the broth in the finished dish becomes velvety and tender.

Preparation
Step 1
You can slightly adjust the amount of each ingredient. Instead of sausages, smoked sausage or bacon can be used, and pickles can be replaced with salted cucumbers.
Step 2
First, prepare the cabbage. If it’s too sour, rinse in cold water and squeeze. Put cabbage, butter, and tomato paste into a pan. Stir and simmer under a lid over medium heat until semi-cooked (about 30 minutes). Check occasionally and add ¼ cup boiling water if needed.
Step 3
Meanwhile, peel potatoes, onions, and carrots. Rinse vegetables. Finely chop onion and grate carrots coarsely.
Step 4
Heat vegetable oil in a pan. Sauté onion and carrots until golden. Add flour, stir, and leave for 1 more minute. Flour can be skipped, but it gives the broth a velvety texture.
Step 5
Remove sausage casings. Slice cucumbers and sausages into rounds. Cut potatoes into small cubes or sticks.
Step 6
Place potatoes in clay pots.
Step 7
Add sausages and cucumbers next.
Step 8
Add sautéed vegetables as the next layer. Finally, add cabbage and bay leaf.
Step 9
Pour in broth. Chicken or meat broth works best. Do not fill to the top, as liquid expands during cooking.
Step 10
Place pots in a slightly preheated oven. At 200°C (392°F), wait until the broth boils, then reduce temperature to 160-170°C (320-338°F) and bake until potatoes are done (approx. 1h 40min-2h). Add chopped olives 10-15 minutes before finishing.
Step 11
Taste and adjust seasoning if necessary. Serve with lemon wedges, fresh herbs, crushed garlic, and sour cream if desired.
