Cabbage, Pea, and Cucumber Salad

Juicy, vitamin-rich, made from fresh vegetables, and mayo-free! This cabbage, pea, and cucumber salad is quick to prepare and a nice change for everyday meals. Dress with vegetable oil, mayo, or sour cream.

Preparation
Step 1
I use red onion for the salad, but regular onion works too. I have frozen green peas.
Step 2
Finely shred the cabbage and lightly knead it with your hands to soften it and help it release juice faster. Transfer the shredded cabbage to a large bowl.
Step 3
Peel the carrots and rinse off any dirt. If using young carrots, you can scrub them with a brush or a rough sponge under running water. Then grate the peeled carrot on a coarse grater and add to the bowl with the cabbage.
Step 4
If you’re using fresh green peas, you can add them directly. For frozen peas, pour hot water over them and drain in a colander. Rinse the cucumbers and slice into half-moons. Add peas and cucumber slices to the salad.
Step 5
Peel the red onion, rinse it under cold water, and slice into thin half-rings.
Step 6
Add the chopped onion to the salad. Drizzle a bit of lemon juice and vegetable oil over the ingredients. Mix everything well. Taste and add salt and a bit of sugar as needed. You can also add a little black pepper. Mix again.
Step 7
The cabbage, pea, and cucumber salad is ready! Transfer it to a salad bowl and serve. This fresh vegetable salad pairs perfectly with meat dishes. Enjoy!
