Cabbage Fritters in a Pan

They’re stewed in a tomato-sour cream sauce, turning simple cabbage into delicious fritters. Although budget-friendly, this dish is incredibly tasty! You can add other vegetables if desired.

Preparation
Step 1
This is a very simple, quick, and affordable dish. First, prepare all the ingredients as listed.
Step 2
Remove the damaged outer leaves from the cabbage. Thinly shred the cabbage, avoiding the tough leaves close to the core.
Step 3
Crack the eggs into a bowl, add salt and pepper, and whisk until smooth. If the eggs are small, use 4 instead of 3.
Step 4
Pour the beaten eggs over the cabbage and mix well.
Step 5
Add flour and baking soda to the cabbage mixture and mix again until you have a uniform mass. Alternatively, you can first combine the eggs with flour and soda, then pour that mixture over the cabbage.
Step 6
Now make the sauce. In this recipe, you can replace tomato juice with ketchup or tomato paste diluted in water. Any fat content of sour cream will work; I used 20%.
Step 7
In a glass, mix the sour cream and tomato juice until smooth, breaking up any lumps.
Step 8
Heat a little vegetable oil in a pan over medium heat. Spoon portions of the cabbage mixture into the pan, forming round fritters of equal size.
Step 9
Fry the fritters on both sides until golden brown, about 3–5 minutes per side. Transfer the cooked fritters to a plate.
Step 10
When all fritters are ready, layer them slightly overlapping in a clean pan. Pour the tomato-sour cream sauce over them. Simmer over medium heat for 10 minutes. Alternatively, you can transfer the fritters into a baking dish and bake them in the sauce in the oven.

Serve the finished cabbage fritters garnished with fresh herbs. Enjoy your meal!
