Cabbage Cutlets with Mushrooms and Spices

Preparation
Step 1
Prepare all the necessary ingredients and spices for making these delicious, healthy cabbage cutlets with mushrooms.
Step 2
Finely chop 1 kg (2.2 lb) of white cabbage.
Step 3
Heat a dry skillet on the stove, add the chopped cabbage, season with salt to taste, cover with a lid, and sauté over high heat.
Step 4
Slice 200 g (7 oz) of mushrooms thinly. Place them in another dry skillet and fry over high heat.
Step 5
Stir and fry the cabbage for 10 minutes, then pour in 120 ml (½ cup) of milk and add 1 tbsp of ghee (clarified butter).
Step 6
Mix well, cover with a lid, and simmer the cabbage for another 10 minutes.
Step 7
To the mushrooms, add 1 tbsp of ghee, a mix of ground peppers to taste, stir, and turn off the heat.
Step 8
Add to the cabbage some dried herbs, ⅓ tsp coriander, ⅓ tsp nutmeg, 1 tsp paprika, and 3 cloves of garlic pressed through a garlic press.
Step 9
Mix everything well, cover with a lid for 1-2 minutes, and let rest.
Step 10
Transfer the cooked cabbage into a large bowl and let it cool slightly. Add the fried mushrooms and mix well.
Step 11
Add 100 g (½ cup) of semolina to the mixture and stir until smooth.

Crack 1 egg into the bowl, mix again, and let the mixture rest for 20-30 minutes.
Step 13
Shape cutlets from the mixture and coat them in breadcrumbs mixed with flour.
Step 14
Heat 2 tbsp of vegetable oil in a skillet and fry the cutlets over medium heat on both sides until golden brown (about 3-4 minutes per side).

Turn off the heat and cover the skillet for 2-3 minutes.

Transfer the cooked cabbage cutlets with mushrooms and spices onto a plate and serve warm.
