Cabbage and Cheese Skillet Casserole

For this dish, you can use any cheese - hard, semi-hard, or soft like mozzarella. The most important thing is that the cheese is tasty, high-quality, without vegetable fat substitutes, and melts well.
Preparation
Step 1
You’ll need just a little cabbage - a small piece from a medium head. Use large eggs, wheat flour, and hard or semi-hard cheese.
Step 2
Rinse and dry the cabbage. Finely shred it with a sharp knife. You can slice it into thin strips or chop it into small cubes.
Step 3
Peel the onion and dice it finely. To prevent eye irritation when chopping onion, rinse the onion and knife under cold water. A cutting board won’t absorb an unpleasant onion smell if you rub it with a piece of lemon beforehand.
Step 4
Put the shredded cabbage in a bowl and lightly squeeze it with your hands - it will become softer and juicier. Add the chopped onion, then crack in the eggs. Always wash eggs before using them, as harmful bacteria can be present even on seemingly clean shells. Season the mixture with salt and pepper. Mix everything with a fork.
Step 5
Grate the cheese on a coarse grater.
Step 6
Add the grated cheese to the cabbage mixture. Sprinkle in the flour.
Step 7
Stir everything until combined into a uniform mass.
Step 8
Heat a skillet over low heat. Mine is 22 cm (about 8.5 inches) in diameter. It’s better to use a non-stick skillet. Pour vegetable oil into it for frying. Spread the cabbage mixture evenly in the skillet.
Step 9
Turn the heat to low and cover the skillet with a lid.
Step 10
Fry the casserole for about 15 minutes until it’s golden brown on the bottom. Without removing the lid, carefully flip the skillet upside down so the casserole sits on the lid. Gently slide it back into the skillet so the browned side is on top.
Step 11
Cover the skillet again. Fry the casserole for another 15 minutes on low heat. Then turn off the heat and let the casserole rest under the lid for 5 minutes.
Step 12
Serve the casserole cut into portions, with sour cream or any sauces you like. Enjoy your meal!
