Cabbage and Cheese Salad

Preparation
Step 1
Use any cabbage; I used young white cabbage. Any cheese works; I used mozzarella. Peel carrots and onion, remove stem and seeds from bell pepper. Wash vegetables and salad leaves in cold water. If using brined cheese, drain the brine.
Step 2
Shred cabbage into thin strips and place in a large salad bowl.
Step 3
Dry salad leaves with paper towels, cut or tear into small pieces, and add to the cabbage.
Step 4
Slice cucumbers into rounds or half-moons and add to the bowl. Peel thick-skinned cucumbers if necessary.
Step 5
Slice bell pepper into thin strips and onion into rings or half-rings.
Step 6
Cut cheese into small cubes, grate carrots on a coarse grater (or use a Korean grater). Add all to the salad bowl with cabbage and cucumbers.
Step 7
Chop fresh herbs (parsley and dill used here; basil or cilantro optional). Add to the salad, season with salt and pepper, and drizzle with vegetable or olive oil.
Step 8
Mix everything thoroughly, taste, and adjust seasoning if needed.
Step 9
Serve immediately!
