Buttermilk scones

Bake fluffy, buttery buttermilk scones with this simple recipe. Perfect with clotted cream and jam for a classic teatime treat.

Preparation
Step 1
Preheat the oven to 220C and line a large baking sheet with baking parchment.
Step 2
Place the flour, baking powder, and sugar into a large mixing bowl. Cut the cold butter into small pieces and add it to the flour. Using your fingertips, rub the butter into the mixture until it resembles breadcrumbs.
Step 3
Pour in the buttermilk and gently bring the dough together, being careful not to overwork it. Lightly flour your work surface, then pat the dough into a round-edged oblong about 4cm thick. Use a 6cm fluted cutter to stamp out rounds of dough.
Step 4
Arrange the scones close together on the prepared baking sheet. Brush the tops with beaten egg if you’d like a golden finish. Bake for 12 minutes, until the scones feel light and the bottoms are dry.
Step 5
Transfer to a wire rack to cool slightly, then serve warm with clotted cream and jam.
