Butter-roasted cherry tomato pasta

Preparation
Step 1
Preheat the oven to 180C. Place the cherry tomatoes in a baking dish large enough to fit them in a single layer. Scatter small pieces of butter over the top, drizzle with balsamic vinegar, and season generously with salt and pepper. Roast for 50 minutes, until the tomatoes are soft and their juices have blended with the butter to create a rich sauce.
Step 2
As the tomatoes near the end of their roasting time, cook the pasta in a large pot of boiling salted water according to packet instructions, until just tender. Drain well and return to the pot.
Step 3
Lightly crush the roasted tomatoes with a fork to release more of their juices, then stir them into the pasta.
Step 4
Cook over medium heat for 3-4 minutes, allowing the pasta to soak up the glossy tomato sauce. Adjust the seasoning if needed and finish with a generous sprinkle of cheese before serving.
