Buns with Condensed Milk

Preparation
Step 1
Use premium-quality flour and large eggs. Butter should be at room temperature, so take it out of the fridge in advance.
Step 2
Pour warm milk (about 98-104°F / 37-40°C) into a bowl, add sugar, salt, and yeast, and mix thoroughly. Since the dough will be mixed right away, test your yeast beforehand. Dissolve a pinch of sugar in 2 tablespoons (40 ml) of warm water, sprinkle a bit of dry yeast on top, and wait for foam to appear. If it foams, the yeast is active and ready to use.

Add the eggs and mix again.

Add softened butter and sifted flour.
Step 5
Knead a soft, elastic, slightly sticky dough. If necessary, add a little more flour, but don’t overdo it - it should remain a bit sticky. The stickiness will disappear as the dough rises and is rolled out.
Step 6
Cover the bowl with a towel and let the dough rise in a warm place for 1-1.5 hours.
Step 7
Transfer the risen dough onto a floured surface and divide it into 15-18 portions (I got 20). Roll each portion into a ball.

Prepare the filling. Use store-bought boiled condensed milk or make your own by boiling a closed can of sweetened condensed milk for about 2 hours over medium heat. Ensure the can is always covered with water, or it may overheat and explode. It’s best to cook it in advance so it can cool completely.
Step 9
Roll each dough ball into a rectangle about 1/8 inch (3-4 mm) thick. Place 1 teaspoon of boiled condensed milk on one edge.
Step 10
Fold the long sides slightly inward to prevent the filling from leaking, then roll into a log. Repeat with all the dough pieces.
Step 11
Place the buns on a baking sheet lined with greased parchment paper, leaving space between them. Let them rest for 25-30 minutes.
Step 12
Prepare an egg wash by beating one egg with a fork until smooth.
Step 13
Prepare the crumble topping. The butter should be cold.
Step 14
In a blender, combine flour, sugar, and cold butter. Pulse until fine crumbs form.
Step 15
Brush the risen buns with the beaten egg.

Sprinkle the tops with the sugar-flour crumble. Bake in a 340°F (170°C) preheated oven for 25-35 minutes, until golden brown.
