Bulgur with Vegetables in a Multicooker

Preparation
Step 1
Which vegetables to use? You can cook with fresh vegetables from your fridge or garden, or use frozen ones. This time, I used a mix of both.
Step 2
Peel the onion, carrot, and garlic. Cut the bell pepper in half and remove the seeds and core. Rinse all vegetables in cold water and pat dry with a towel to remove excess moisture. Dice the onion, carrot, and pepper into even-sized cubes.
Step 3
Pour some refined vegetable oil into the multicooker (multi-cooker) bowl. Set it to the “Fry” mode. Once the oil heats up, add the onion, carrot, and pepper. Stir and cook for about 10 minutes until slightly softened.
Step 4
Meanwhile, rinse the bulgur several times in cold water until clear.
Step 5
Add chopped tomato (or whole cherry tomatoes) into the multicooker. You may peel them first if desired. Add a handful of frozen vegetables as well. Stir and cook for 5 more minutes.
Step 6
Add the rinsed bulgur and finely chopped garlic to the bowl.
Step 7
Pour in water - for each cup of bulgur, add two cups (about 16 fl oz / 480 ml) of water. Season with salt and pepper to taste, then stir.
Step 8
Close the multicooker lid and set it to the “Rice/Grain” or “Pilaf” mode. Cooking time will set automatically depending on your multicooker model (usually 25-30 minutes at about 200°F / 95°C).
Step 9
Bulgur with vegetables is ready! Serve hot or cold, topped with chopped fresh herbs. Enjoy!
