Preparation
Step 1
Prepare the ingredients. Instead of beef, you can use pork, lamb, chicken or turkey. You can also add or replace the vegetables according to taste.
Step 2
Sort through the buckwheat, rinse thoroughly until the water runs clear and drain well in a sieve. You can replace buckwheat with another grain, but the cooking time may change; some grains, such as pearl barley, require soaking beforehand.
Step 3
Pat the beef thoroughly dry with paper towels and cut it into small pieces. Use boneless meat. Drying the surface well will help the beef brown instead of steaming.
Step 4
Peel the carrot and cut it into thin strips.
Step 5
Peel the onion and cut it into cubes or half-rings. If preferred, omit the onion or replace it with another vegetable, such as bell pepper.
Step 6
Heat the vegetable oil in a cauldron or deep frying pan over high heat. Add the beef and cook, stirring, for 10–15 minutes, until partially cooked and browned.
Step 7
Add the onion, carrot, tomato sauce and spices and mix well. Cook over medium heat for about 10 minutes. You can replace the tomato sauce with tomato paste or ketchup.
Step 8
Add the buckwheat and spread it into an even layer. Do not mix it into the meat.
Step 9
Pour in enough hot water or broth to cover the buckwheat by about 1¼–1½ inches. Bring to a boil.
Step 10
Cover and cook over low heat for 25–30 minutes, until the buckwheat and beef are tender. Add a little more hot water if needed. Stir everything together at the end.
Step 11
Divide the buckwheat with beef between plates and serve hot.
