Buckwheat Patties with Vegetables

Preparation
Step 1
First, prepare all the necessary ingredients with spices for cooking delicious dietary buckwheat patties with vegetables.
Step 2
Rinse 10.5 oz (300 g) buckwheat groats, place them in a saucepan, soak for 2 hours, then add ½ cup (120 ml) water. Cover and cook on low heat until steamed.
Step 3
Heat a pan with 2 tbsp vegetable oil, add 1 finely chopped onion, stir and sauté over high heat until translucent.
Step 4
Add 1 medium carrot, grated on a coarse grater, salt to taste, and 2 garlic cloves pressed through a garlic press. Stir occasionally and sauté.
Step 5
Stir the buckwheat in the saucepan to prevent burning, cook about 10 minutes, then turn off the stove and cover for 5 minutes.
Step 6
Add to the pan with vegetables: 1 tsp paprika, ½ tsp khmeli-suneli, ⅓ tsp coriander, ⅓ tsp nutmeg, and ground pepper to taste. Mix well and turn off the stove.
Step 7
In a large bowl, combine the cooked buckwheat and the sautéed vegetables.
Step 8
Crack 1 egg into the bowl. Blend all ingredients with an immersion blender until smooth.
Step 9
Shape patties from the mixture. Coat them in breadcrumbs mixed with premium wheat flour, then place on a plate.
Step 10
Heat 2 tbsp vegetable oil in a pan, place the patties, and fry over medium heat 2-3 minutes per side until golden.
Step 11
Serve the prepared dietary buckwheat patties with vegetables on plates with garnish of your choice.
