Preparation
Step 1
Prepare the ingredients. Bruschetta is usually made with white bread such as a baguette or ciabatta, but you can use any bread you like. For the spread, choose plain cream cheese or another soft cheese. If desired, combine it with a stronger-flavored cheese such as feta or goat cheese.
Step 2
Cut the bread into slices about ⅜ inch thick. If using a baguette, slice it diagonally to make longer pieces. Toast in a dry frying pan for about 1 minute per side, until crisp. You can also use a grill pan or toast the bread on a baking sheet in the oven. For a more golden finish, spread a little butter on one side before toasting.
Step 3
Combine the two cheeses in a small bowl and mix thoroughly with a spoon or fork until smooth. If desired, beat them briefly with an electric mixer for a lighter, fluffier texture.
Step 4
Let the toasted bread cool slightly, then spread a generous layer of the cheese mixture over each slice.
Step 5
Top generously with pieces or slices of lightly salted salmon. You can also use trout, chum salmon or pink salmon, either salted or lightly smoked.
Step 6
Garnish with fresh herbs such as dill, parsley, green onions or basil. If desired, add cherry tomatoes, olives or lemon wedges, then serve.
