Preparation
Step 1
Prepare all the ingredients. You can use a baguette or another white loaf.
Step 2
Cut the baguette diagonally into slices about ½ inch thick.
Step 3
Arrange the bread on a parchment-lined baking sheet and lightly brush with vegetable oil.
Step 4
Toast in an oven preheated to 390°F for 5–7 minutes, until lightly golden. The exact time will depend on your oven. Alternatively, toast the bread on both sides in a dry frying pan.
Step 5
Prepare the filling ingredients. The shrimp can be replaced with slices of lightly salted or smoked salmon or trout if desired.
Step 6
Remove the heads and shells from the shrimp, leaving the tails on for presentation if desired.
Step 7
Melt the butter in a frying pan over medium heat and cook the shrimp on both sides until lightly browned and cooked through.
Step 8
Peel and finely chop the garlic.
Step 9
Cut the avocado in half, remove the pit, peel and slice the flesh.
Step 10
Place the avocado, mayonnaise, garlic, lemon zest and lemon juice in a blender. Season with salt and blend until smooth, thick and creamy. Add other spices to taste if desired.
Step 11
Spread the avocado mixture over the toasted baguette slices.
Step 12
Top each bruschetta with shrimp.
Step 13
If desired, garnish with thinly sliced chili pepper or cherry tomato wedges. Add fresh herbs and serve.
