Brownie with Banana and Cocoa in the Oven

An incredibly delicious sugar-free chocolate treat! Brownie with banana and cocoa in the oven is a soft, airy, spongy cake made with just five ingredients! The batter takes only five minutes, the oven does the rest.

Preparation
Step 1
All ingredients should be at about the same temperature. Take eggs out of the fridge 30-40 minutes in advance. Choose ripe bananas (yellow peel, no black spots). Use large eggs. Preheat oven to 340°F (170°C).

Peel bananas and break into small pieces.
Step 3
In a blender bowl, combine banana, eggs, cocoa, and baking powder. Do not substitute with baking soda (no acid in this recipe). Bananas provide enough sweetness, but you may add a heat-stable sweetener if desired.
Step 4
Blend until completely smooth. Batter should be pourable, not too runny. If too thin, add more cocoa; if too thick, add 1-2 tbsp (15-30 ml) of water or milk, little by little.
Step 5
Pour batter into a parchment-lined baking pan (Ø 5.5-6.3 in / 14-16 cm). Bake at 340°F (170°C) for 40-45 minutes. Do not open oven for the first 20 minutes. Test with a wooden skewer - it should come out slightly moist but clean. Adjust time to your oven.
Step 6
While hot, top with broken pieces of dark or bitter chocolate. Let sit 2-3 minutes to soften, then spread with a spatula. Alternatively, melt chocolate separately and drizzle over.
Step 7
Let brownie cool completely before removing from pan. Transfer to a plate and serve. Texture may vary (fine or large pores) depending on oven and egg blending. Enjoy!
