Broccoli with cheese sauce

A comforting broccoli bake topped with rich, cheesy sauce and baked until golden. An easy side dish for your lunch or dinner.

Preparation
Step 1
Preheat the oven to 220C.
Step 2
Bring a pan of water to the boil, add the broccoli, and cook for around 3 minutes until just tender. Drain thoroughly and transfer to a small ovenproof dish.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, stirring continuously. Slowly pour in the milk, whisking well as you go, until the mixture forms a smooth sauce. Continue cooking over medium-low heat, stirring frequently, until the sauce thickens slightly.
Step 4
Take the pan off the heat and stir in the grated cheese, mustard, a pinch of salt, and some black pepper. Mix until the cheese has fully melted and the sauce is smooth.
Step 5
Pour the sauce evenly over the broccoli, then bake for 20-25 minutes, until bubbling and golden in spots. Serve hot.
