Broccoli spaghetti with turkey

Preparation
Step 1
Half fill a large saucepan with water, cover with a lid, and bring to the boil. Add the spaghetti and cook uncovered for 10 minutes, stirring occasionally to prevent sticking. Add the broccoli florets to the pan and cook for an additional 2-3 minutes, or until both the spaghetti and broccoli are tender.
Step 2
Meanwhile, cut the turkey into smaller chunks and season with a little salt and freshly ground black pepper. Heat 1 tablespoon of oil in a large non-stick frying pan and cook the turkey over medium-high heat for 3-4 minutes, stirring regularly, until lightly browned. Transfer to a plate.
Step 3
In the same pan, add the remaining oil and fry the onion over high heat for 3-4 minutes, stirring often, until softened and beginning to brown. Reduce the heat to medium, sprinkle over the flour, and stir well. Crumble in the stock cube and gradually add the milk, a little at a time, stirring thoroughly between each addition to form a smooth sauce.
Step 4
Once all the milk has been incorporated, return the turkey to the pan, add the cheese, and bring to a gentle simmer. Cook for 2-3 minutes more, stirring constantly, until the sauce thickens and the cheese is melted. Season with ground black pepper to taste.
Step 5
Drain the pasta and broccoli in a large colander, then return them to the pan. Stir in the creamy turkey mixture, toss everything together, and serve immediately.
