Broccoli Salad with Cheese

Preparation
Step 1
Garlic can be omitted if desired or used in minimal amounts. Olive oil or refined vegetable oil will work.
Step 2
Rinse broccoli and separate into small florets of similar size. Peel the garlic.
Step 3
Bring water to a boil in a small pot or saucepan. Put the broccoli into boiling water and leave for 30-60 seconds. For very small florets, 30 seconds is enough. Do not overcook broccoli, or it will become soft. Drain in a colander.
Step 4
Place the florets in a small deep bowl and let cool slightly. Drain the brine from the cheese. Break the cheese into small pieces by hand or cut into small cubes with a knife. Add to the broccoli.
Step 5
Press the garlic through a garlic press and add to the salad bowl. Add a pinch of ground black or allspice pepper and drizzle with oil. At this stage, you can add favorite seasonings such as dried basil, oregano, ground paprika, etc.
Step 6
Mix everything thoroughly and taste for salt. Add salt if necessary (I usually don’t, as brined cheese is salty enough).
Step 7
Optionally, sprinkle the salad with finely chopped herbs and serve.
