Brizoli Wafer Bites with Mozzarella in a Multi-Baker

Preparation
Step 1
You’ll need: 24 small “brizoli” wafer sheets, 2 eggs, 70 g mozzarella (about 2.5 oz), and 3 g dill (about 0.1 oz, chopped leaves without thick stems).
Step 2
Finely chop the dill. Cut the mozzarella into pieces about 5 mm (≈1/4 in) thick and roughly 2×2 cm (≈3/4×3/4 in).
Step 3
Crack 2 eggs into a deep bowl and beat with a fork until smooth; lightly salt to taste.
Step 4
For one portion, use 4 wafer sheets: 2 on top and 2 on the bottom. Place a piece of mozzarella and a little dill in the center.
Step 5
Dip the piece in the egg mixture on both sides. Using 4 wafers instead of 2 prevents it from getting soggy and helps it hold its shape after cooking.
Step 6
Cook on the grill plates with the lid closed (pre-grease the plates with vegetable oil) for 4 minutes at 1000 W (adjust to your device).
Step 7
Serve immediately while hot - though it’s tasty chilled too. Enjoy!
