Breakfast “Happy Bunny”

Quick, made from simple ingredients, and full of cheer! Breakfast “Happy Bunny” is a great idea that will delight your children and lift adults’ spirits. These cute little bunnies also make a wonderful decoration for the New Year or Easter table.

Preparation
Step 1
First, prepare the required ingredients. Only a minimum is needed.
Step 2
Hard-boil the eggs. It’s important to cook them properly so they peel smoothly. For this, use eggs that are at least a week old. They should be at room temperature before boiling - take them out of the fridge 30 minutes earlier. Place them in a saucepan, cover with warm tap water, and set over medium heat. Bring to a boil, then cook on low heat for 9-10 minutes.
Step 3
While the eggs are cooking, prepare ice water. Fill a bowl with cold tap water and add ice cubes so it stays very cold. Transfer the cooked eggs into this water until fully cooled.
Step 4
Peel the cooled eggs carefully. Cut one egg lengthwise in half, then each half into 3 wedges. You’ll get 6 slices - these will be the bunny ears. Fix each slice with toothpicks.
Step 5
Remove leaves from parsley, leaving only small branching stems. These will serve as whiskers. You can also use dill stems instead.
Step 6
Cut small circles (about 0.2 in / 5-7 mm in diameter) from bell pepper. A pastry tip works well for this, then trim to size with scissors if needed.
Step 7
Insert toothpick halves into the back of each bell pepper circle. Don’t pierce all the way through - the smooth skin side should remain intact.
Step 8
Start assembling: insert cloves into the top of each egg for eyes. Slightly lower, attach the bell pepper “nose” with toothpicks. Add parsley stems on each side for whiskers. Finally, place the ear slices. You can also add a mouth from tiny parsley sprigs - adjust its shape to give each bunny a different mood.
Step 9
Place the finished bunnies on small plates. I added lettuce leaves underneath. For stability, you can trim a little off the egg bottoms. Serve as a fun appetizer or festive decoration.
