Braised Ribs in a Slow Cooker

If you’re using ready-made spice blends, always read the ingredients on the package. They often already contain salt, so keep this in mind to avoid over-salting your dish.
Preparation
Step 1
Rinse the pork ribs thoroughly under running water and pat dry with paper towels to remove excess moisture. I try to choose ribs with more meat for a heartier dish.
Step 2
Cut the ribs into smaller pieces.
Step 3
Peel the onion and carrot and rinse off any dirt. Cut the onion into half rings or slightly smaller pieces - no need to chop it too finely. Slice the carrot into rounds or sticks. If desired, you can grate the carrot on a coarse grater.
Step 4
Pour vegetable oil into the slow cooker bowl and turn on the “Sauté” mode (or “Fry” mode if that’s what your device calls it). Add the prepared pork ribs and fry them until they’re golden brown. Then sprinkle with salt and spices. You can use ground black pepper and khmeli-suneli, or any other spices to your taste.
Step 5
Next, add the chopped onion and carrot into the slow cooker. Add the minced garlic. Stir everything well and continue sautéing together for another 5 minutes.
Step 6
Dissolve the tomato paste in a glass (about 200 ml) of hot water and pour it into the slow cooker over the ribs. For extra aroma, add a bay leaf. Switch the slow cooker to “Stew” mode for 1 hour. If you’d like more sauce, you can add more water.
Step 7
During stewing, the meat on the ribs will become tender. The vegetables will almost completely cook down, and a wonderful aroma will fill your kitchen.
Step 8
The braised ribs are ready! Serve them on a plate with any side dish and enjoy while hot. Bon appétit!
